This fantastic new coffee, grown by Jairo Arcila, comes to us from Finca Santa Monica in the Quindo region of Colombia. The coffee has been processed using a ‘Natural Extended Fermentation’ which is a process that derives from white wine production. It undergoes an initial wine yeast fermentation, then is left to dry to 20% moisture. It then goes through a further natural fermentation before being left to dry to 10% moisture.
So how does it taste? Expect to taste a coffee that is packed full of Banana, Pineapple and Chocolate, along with the funkiness that comes with the processing method. This is without a doubt one of the best coffees we’ve brought in this year. An absolute must try.
