The latest coffee to grace our roaster comes in the form of the lesser known Marshell varietal from Alejandro Padilla in Cajamarca, Peru.
A fully washed process, the ripe cherries are carefully selected, hand sorted for defects and then pulped, they are then carefully dry fermented for 28 days before washing and sun drying for another 15 days. With the Marshell being an offshoot of bourbon, you can expect to find a similar complexity of fruit in the coffee but all held together by this wonderful pecan and frosties like note, which very much makes this our favourite morning coffee.

Recommended brew recipe:
This is designed to work as both a filter and espresso. For filter we recommend using your usual recipe and if needed grinding a touch coarser.
For espresso this will benefit from a heavier out weight or a longer extraction time.
