We enjoy this coffee release because we really get to lean into a coffee taste profile that links into the festive period. Big and juicy with cooked fruits and a sweet spice character that is perfect for warming up your bones.
This year we have opted for a long standing coffee origin and a natural processed coffee. Diego Abarca has produced a lovely catuai varietal at his San Calletano farm. The farm is divided into sections and small microlots, this particular bag coming from the Aguacates lot, before being processed in his own micro mill on his parents land. Having the Alto San Juan Micro mill and his own portion of land to farm has given Diego the opportunity to spread his wings and produce coffee in his own way. Experimenting with several processing methods and varietals and refining known processes to be better and better each harvest.
We brought this lot to you because for us it embodies the character of winter and the Christmas season. Enjoy that fruit and warming spice after your outdoor walks, shopping or all that decorating.ย

Brew Tips:
This coffee needs a good 10 days rest to start really shining. Also benefits from a slightly longer brew time and a heavier brew weight.
