This coffee feels like a full circle moment for Papercup.
Our coffee journey started over in Australia, where Papercup owner Graeme spent a decade working in the emerging specialty coffee scene.
The whole concept and ethos of Papercup was developed from his time down under, where the focus was on independently owned coffee shops that focused on quality over convenience and returning cafes to social hubs with a culture that values the experience of coffee as much as the beverage itself.
Australia has been producing specialty Arabica coffee for decades, quietly and without much fanfare. In the last decade or so growers have been producing some truly wonderful coffee with quality that stands up to coffee grown anywhere in the world. The best Australian lots now have genuine identity, not borrowed from anywhere else.
Flying the flag for Australian coffee is Jack Murat.
Jack Murat Coffee is grown, processed, and roasted in Mareeba, Queensland, on what is today Australia's largest coffee estate. Through careful farming and processing, they're working to show what Australian-grown specialty coffee can look like - honest, traceable, and distinctly of its origin.
The farm sits at 600 metres above sea level in Mareeba, Far North Queensland - on red volcanic soil and sandy loam. Volcanic origin, altitude, latitude: all the conditions to grow Arabica at a world-class standard.
This Honey lot is fermented in whole cherry before being pulped and slowly dried on raised beds. The result is a layered and expressive coffee that balances fruit sweetness with structure and depth. Layered and syrupy, balancing bright fruit acidity with rounded sweetness and medium body across both filter and espresso.
