Following our last Ethiopian coffee 'Tropic Thunder' at the end of 2023, we knew we needed something special to follow it up. During our extensive sampling we came across an Anaerobic process from the Kochere Beloya station in Yirgacheffe that had us thinking someone had swapped the coffee in the cupping bowl with an Aperol Spritz.

Expect to be transported to a Venetian paradise with notes of sweet orange liqueur, bramble with a boozy and floral finish. 

This grade 1 microlot from Kochere Beloya was naturally processed with an extended 120 hour 'anaerobic' cherry fermentation in vacuum sealed bags. The ‘anaerobic’ bacteria takes over fermentation after around 18-24 hours, due to the build of CO2 pressure in the bags. The fermented cherries are then dried in the sun on raised African beds for 15-18 days, during which they are carefully turned to prevent spoilage from mould formation. Once the cherries have sufficiently dried they are rested before being transported to a central dry mill in Addis Ababa for secondary processing (hulling, grading, sorting and handpicking).

Recommended brew recipe:
This is a relatively permeable and quick brewing coffee. Go a little coarser than your usual setting. It is forgiving and tastes real good on any brew method.
