Our new offering from Colombia is a naturally processed Aji Borbon varietal from Luis Anibal Calderon of the Villa Betulia farm in Huila, Acevedo. 

Expect a super sweet and juicy cup with notes of concord grape and blackcurrant.

The Aji Borbon has a meticulously curated journey from start to finish. This coffee undergoes a dynamic process, starting with an 84-hour water immersion and a subsequent 16 day dry in the sun. A mechanical finish in a silo adds a unique touch. Following this, it undergoes a 30-day chilling period in cherry form to achieve the optimal moisture balance.

Recommended brew recipe:
This is a relatively permeable and quick brewing coffee. Go a little coarser than your usual setting. It is forgiving and tastes real good on any brew method.
